New to the back bar as of last week is a spirit that is used to make the national cocktail of Brazil- the Caipirinha. It is cachaca, a rum-like liquor made from fresh sugarcane and legally only made in Brazil. It is distilled only once to preserve its fresh aromas of green herbs and citrus. Leblon's cachaca is then barrel aged in old cognac casks for one to three months and triple filtered to achieve it's smooth texture in the mouth. To make a Caipirinha-also known as a Brazilian Mojito-our bartenders muddle fresh limes, add simple syrup for balance, pour in Leblon cachaca, add ice, shake vigorously, and garnish with a lime wedge.
